Chicken Burgers with Poached Eggs & Avocado These are the burgers we get requested to cook up pretty much every single weekend! Serves https://www.whattocook.com.au/wp-content/uploads/2014/03/21.03.14-Chicken-burgers-16-1400x784.jpg Ingredients: 4 Chicken breasts, at room temp Emmental cheese, sliced Burger buns, toasted Cos lettuce, shredded 1 tomato, sliced 1 avocado, sliced ½ red onion, diced 4 poached (or boiled) eggs Mayonnaise to serve Instructions:
  1. Poach or boil eggs then set aside. On a large fry pan (low to medium heat) cook chicken 4-5 minutes each side once chicken is cooked on one side place cheese on the other side. While cooking chicken grill the buns.

  2. To serve, spread base of each bun with some mayonnaise, then top with lettuce, chicken, tomato, avocado, eggs and a little more mayonnaise, enjoy.

Ingredients

Method
